The Secret of pineapple fried rice

In Asia ,The Definition of good fried rice , you will need to use the cooked rice from last night. No typical reason, just one part of cultures in Asia, we do not like to waste food, So if we ever make fried rice, it usually because we have extra cooked rice that we did not finished in the dinner, so we kept it for next day, to make fried rice with eggs and some leftovers ,it became another "dish". I am not sure if it's true but it's kind of reliable information I found online lol.

But it definitely helps me save some time of rice cooking.

For prepare this dish , you need a fresh pineapple and cut into half , take out all the meat and put it aside as later you will need it as a plate or container.

You can see the rice color isn't white but a little brown. Yes I have add some saffron powder to seasoned it and colored it.


 

Ingredients:


1 Pineapple ( pick one with sweet smell , thats meant ready to eat) , chopped the meats and rest aside.

2 bell pepper , each red x 1 , yellow x 1. chopped,

1Tbs saffron powder ,

sprinkle salt and pepper ,

2 bowl of pre-cooked rice, ( this serving for 2~3 person )

olive oil 1 tbs


Here are few steps for this recipe-

Pre-cook white rice(or brown rice )cool down and put it in fridges over night.

Cut pineapple into half, carefully cut off the fruit ,chopped the fruit and rest aside.

heat the pan & olive oil ,medium heat,put all the rice into pan, and then add pineapple fruit,Also bell peppers, keep in low heat.

Add saffron powder, salt,pepper,until the rice colored.

once it cooked, put them into pineapple bowls, finished.
