Blueberry mousse cake & Chocolate Butterflies

what does it looks like in the summer garden?I created the garden in my kitchen,it was fun to make this dessert with dry flowers I bought weeks ago,and made it into my inspiration-summer garden.

I love blueberry, especially it is aka super food, normally I add some frozen blueberries into my yogurt,tried to get the better health and energy. Right now , I make them into my dessert lab with butterflies.


For Cake:

2 large eggs, separated, at room temperature.

1/4 cup granulated sugar, divided1 tablespoon milk.

1/4 teaspoon almond extract.

1/4 cup plus 2 tablespoons (40 grams) cake flour.

2 tablespoons (15 grams) almond flour.

1/4 teaspoon fine sea salt.

For Mousse:

3 sheets leaf gelatin.

1/2 cup blueberry purée.

1/2 cup mascarpone cheese, at room temperature.

1/4 cup granulated sugar.

3/4 cup whipping cream.

1/2 teaspoon vanilla extract.

1/4 teaspoon almond extract

pinchfine sea salt.


For Mirror Glaze:

6 sheets leaf gelatin.

1 cup sugar/

2/3 cup corn syrup or glucose syrup/

1/2 cup water/

1/2 cup sweetened condensed milk/

7 ounces good quality white chocolate,

finely chopped.



 

Chocolate Butterfly


Instant chocolate pen (4~5colors).put in hot water to soften & melted.

Oven paper.

Pen.

draw butterfly wings & whole shape on oven paper and turn another side to draw by instant choco pen.

place them on a middle of open book,for a more 3D looks & let it dry until it became hard

between wings ,you can fill in other color to make it more lively.


Each wings I draw separately and use the rest of melted chocolate to glue wings together,you can see my butterflies are flat with blockes of color,because I decided to turn them upside down before started to glue it. you can use the original side before make it dry.
