In France , Madeleine are easily found in most of bakeries. It is a type of cookie, and it is very popular.
what makes Madeleine so charming ? I think one of reason is how lovely it looked like a shell, and it tasted more richier than sponge cake in that tiny piece.
Madeleine recipe-
Low-Flour:188g. Baking powder:1/2tbs. Salt:1/4tbs. Coriander seed :1/2tbs ( Nutmeg can replace) unsalt butter:170g. Egg: Egg white x3 + egg yolk x1. Sugar:120g Lemon peels :1 lemon.
Sugarcoat recipe-(you can skip it)
Icing sugar:145g Lemonade:35g Honey:1 big spoon( around 15g) Melted butter:55g
Just Few Preparation-
Step 1-
*Prepare lemon peels and mix the sugar,
and use your finger to rub them until oil comes out, set aside.
*Cover mold with a slice of butter,and spread on some flour,
after shake it off a bit, and freeze it until later.(usually 1 hour).
*Mix through all the flour/powder /salt. and sift all.
Step 2-
Now we are gonna blend it all,
High-Speed blend Eggs and sugar about 5minutes until silky smooth.
Continually add flour into egg batter, Low-speed, unitl you do not see flour,
and then add the second time.
Nicely mixture.
Step3-Very Important part-
Take some batter into melted butter and mix through nicely,and then put them all back into the Egg batter, mixing it until without detached state.This is for Emulsification even stronger.
Use plastic wrap to cover the whole batter, or put them into a container with cap.
Freeze in Refridgerator for Gelatinization by over 1 hour or through a night.
Ready to bake-
Fill in all the batter into Madeleine mold,about 8~9 full.
Oven pre-heat 220°C, and then put in middle of oven for 10~11 minutes.
After baked,move the mold out of oven, rest for 10 minutes, and then use bamboo stick to remove them from mold & Let it cool down.
